Sugar-Free Raspberry Chia Jam

Who doesn’t like sweets? Today I will share with you, 3-ingredient sugar-free raspberry chia jam! Perfect for topping pancakes, waffles, or enjoying on toast.
Ingredients:
150-200 grams fresh or frozen raspberries
3 tablespoons chia seeds
1 teaspoon honey (optional)
Instructions:
Prep the chia seeds: In a small bowl, soak the chia seeds in enough water to cover them by about 1/4 inch. Let them sit for 15-20 minutes, stirring occasionally to prevent clumps.
Cook the raspberries: In a frying pan or small saucepan over medium heat, add the raspberries. Using a potato masher or fork, gently mash the raspberries until they break down into a puree.
Thicken the jam: After a couple of minutes of simmering, add the soaked chia seeds to the raspberry puree. Stir in the honey (if using) and combine everything well.
Simmer and thicken: Continue simmering the jam, stirring occasionally, until the consistency thickens and the excess liquid evaporates. This may take 5-10 minutes depending on the juiciness of your raspberries.
Tips:
Adjust the amount of honey to your taste preference. You can also use other natural sweeteners like maple syrup or agave nectar.
Let the jam cool completely before storing it in an airtight container in the refrigerator.
