Basil pesto recipe

Pesto is a versatile and delicious sauce that can elevate any dish. I like to have it with pasta, spread it on a sandwich, enjoy it with eggs for breakfast, or use it as a dip. Plus, it's simple and fast to make with fresh ingredients!

Ingredients:

  • 2 cups fresh basil leaves

  • 1/2 cup grated Parmesan cheese

  • 1/2 cup extra-virgin olive oil

  • 1/3 cup pine nuts (you can substitute with walnuts)

  • 3 garlic cloves

  • Salt and pepper to taste

Instructions:

  1. Prep the Basil and Nuts: Wash the basil leaves thoroughly and pat them dry.

  2. Blend the Ingredients: In a food processor or blender, combine the basil leaves, nuts, and garlic. Pulse a few times to chop everything roughly.

  3. Add Cheese and Oil: Add the grated Parmesan cheese. Add the olive oil until the mixture is smooth and emulsified.

  4. Season and Finish: Season the pesto with salt and pepper to taste.

  5. Store and Serve: Transfer the pesto to an airtight container. It can be stored in the refrigerator for up to a week.

You can adapt the proportions of ingredients based on your taste. Personally, I like garlic very much, so I usually add a bit more than what's written in the recipe.

Today we cooked spinach gnocchi, and the pesto was the perfect match.
